I found some neat looking beets at Chuck’s, the nearby market. They have a mild flavor in comparison with regular beets.
It must be the weather – I’ve been in the mood for soup. So, I took some canned pumpkin and chicken broth, added the golden beets and blended them. The result was a perfect Fall soup.
Then I decided to try just pumpkin and chicken broth. It was tasty too!
I’m excited to do more cooking. After my chicken noodle soup success last week, I’m feeling more motivated.
