Yams (and Marshmallows!)

Growing up, I always wanted to try yams with marshmallows. It wasn’t a dish that my mom fixed.

Since yams were on sale this week, I bought a few.

I cooked and blended the yams, added a little bit of cinnamon and brown sugar and plopped some marshmallows on top. (I realized later that I probably should have used mini-marshmallows instead.)

At first I tried using a sharp small knife to cut the peeled yams into smaller chunks. This made the task fairly laborious. Then, I switched to a larger knife which made it much easier.

They turned out great! I think this dish is more of a dessert than a side dish, but I will definitely be making it again.

  2. FYI - If you peel the yams after you cook them the peel literally peels right off. That layer under the skin is where all the good stuff is and it's a shame to waste any of it.
