This recipe turned out pretty tasty, although not spicy enough for my taste. The smells of the raw vegetables and freshly grated ginger were amazing though.
I served it over brown basmati rice, which I found to be delicious.

Hummm, I only like coconut when it's in an almond Joy with no nuts, the one with the dark chocolate. mmmm.Well I do like coconut custard pie and coconut cream pie but only once every five years. But I would try your chicken dish Even though I am not crazy about rice. It still looks yummy in spite of the curry. Just kidding. It looks yummy.

ReplyDeleteJenna, this sounds wonderful. Did you know the crockpot is the best kitchen invention, in my opinion (which isn't worth much of course), for those of us who love soup. You can throw healthy ingredients in, for just dollars, and come back several hours later and voila!, dinner.

Tammy: I agree! In fact, I just finished eating some soup that I had frozen from a prior crockpot session - turkey and wild rice with yams, parsnips, onion, etc. It was great! I plan to do a lot more crockpot cooking in the near future. Thanks for reading (and commenting)!
