Chicken Cordon Bleu & Adventures with Wine

This evening, I made dinner for my parents. I enjoy cooking for other people, but when I am just cooking for myself I am pretty lazy. So, I asked if I could cook with them as an alternative to the ‘I-want-to-get-married-so-I-can-cook-for-someone’ blues.

This was my first attempt at cooking with wine. After one bottle shattered in the driveway when I was bringing it home from the grocery store, I returned and got another. Later, I attempted to open it with a knife (forgetting I had a corkscrew) and it exploded in my face. Apparently, I shouldn’t attempt to cook with wine.

I made chicken cordon bleu (chicken with ham and Swiss cheese inside) and broccoli with red pepper flakes and Parmesan. Everything turned out quite good! Keith wasn’t a big fan of the broccoli (since he doesn’t like anything green) but I thought that it was tasty.

I’m hoping that I can cook for them one night a week. I say ‘hoping’ because my mom and I have such different tastes… and it’s possible that she won’t like all the things I make. But, I’m trying to choose carefully.

Now I’ve got to find some other recipes to finish off that bottle of chardonnay (since I don’t particularly care for just drinking wine… at least not yet).

  1. Looks very yummy. Now you have to try chicken kiev. I love broccoli........

    I think your mom would like caramel corn.

  2. Aunt Duddie: Too bad I don't have a deep fryer... actually... not too bad. They scare me. Unless you can do Chicken Kiev in the oven too? (the first recipe I saw said to deep fry it.)

    My mom does indeed like caramel corn. :)
