After last week’s successful chicken soup ‘experiment’, I decided that I wanted to make some more. It seems like the perfect dinner for this chilly weather.
This time, I decided to try some additional ingredients.
I jogged (sort of) to the grocery store with a backpack holding my canvas bags. Then, I picked up too many vegetables and a rotisserie chicken. I walked back home (it’s about 1.2 miles round trip) and got to work on the stock.
Soon, I’ll post the very easy recipe for making homemade chicken stock, unless you’ve already gotten it from Linda. :)
The vegetables I am going to add to the soup are:
- celery
- yams
- fingerling potatoes
- carrots
- parsnips
- zucchini
- onion
I’ll add the veggies to the strained stock tomorrow, let them cook all day in the crockpot and then add the chicken and wheat noodles and some seasoning. I can’t wait!
